D-Feast Friday!

I took the time to write out my internet-inspired recipes on 3×5 index cards. Then I thought I lost them! After a mini late night wild goose chase, they’ve been located. Have no fear, the recipe is here!

Orange Cranberry Muffins

2 1/2 c Almond Flour (you can make your own in a food processor, it’s best to used blanched almonds)
1/4 tsp Salt
3/4 tsp Baking Soda
2 eggs
1/2 c Honey
3 TB Butter
1 c Fresh Cranberries
2 clementines or 1 orange

Preheat oven to 325 F.
Remove rind from one orange and leave the other as is, removing only it’s stem stub.
Process both oranges in a food processor.
Put oranges in a mixing bowl and add the remaining wet ingredients.
Mix well.
Add dry ingredients.
Mix well.
Place in cupcake lined tin, 1/2-3/4 full. (Almond flour does not rise the same as normal flour, so they won’t get too high)
Bake 35 mins. If you decide to make a loaf instead of muffins it’ll take about 10 mins more.

When I made them I made about 14 muffins. There are about 14 carbs and 190 calories per muffin. (The whole recipe is 191 carbs and 2663 calories if your muffins are smaller/larger)

Enjoy! They’re super moist and incredibly delicious!


Who Really Knows

Man oh man things been rough lately. Not in the way that I’ve been working exceptionally hard. It’s just been a tolling time in my life. I don’t know what I want. I truly love living in Idaho and, really more so, Montana. If I could live and work in Montana, wow, it would be wonderful. But, I’m not contributing and I don’t have a purpose here. Okay, I won’t be so closed minded that I don’t have a purpose. But I am certainly not contributing and being a part of the purpose for my coming here.

Cymbalta withdrawal sucks. I constantly feel like I have the shakes. My body temperature is ridiculously unstable. I have a nasty case of the cold shakes. My blood sugars have taken to not working at all. They spend an entire day high and by the time I get them to come down they suddenly seem to grasp the concept of insulin…and plummet.

Most people have 5-6 day weekends this weekend. And there have been hiking trips each day. I can’t go with anyone. Friday evening I took a walk with a couple girls, I was sweaty and disgusting afterward. Actually, I was sweaty and disgusting prior to the walk. Yes, a walk not a hike. We were gone for just over an hour and I was tired afterward. A group went hiking today, it was a 13 mile hike. Just 5 months ago a 13 mile hike would be a fun afternoon activity. Now, it seems impossible. I want to start walking, I want to swim laps, I want to be strong again, I want to be able to go take a 10 mile hike on a whim. Continue reading

D-Feast Fridays…A Bit Late

I caught on to the whole idea of the recipe posting on Fridays a bit late. So, here I am, posting on Sunday!

As promised:

Sweet Potato Burritos

Sweet Potatoes:
For sweet Sweet Potatoes:
Peel and cube desired quantity of sweet potatoes
Mix in enough oil to coat
Sprinkle brown sugar and cinnamon over top and mix

For spicy Sweet Potatoes:
Peel and cube desired quantity of sweet potatoes
Mix in enough oil to coat
Sprinkle with chili and cayenne powder, using more chili than cayenne and mix

Spread as flat as possible in baking dish or pizza pan. Bake at 350F until tender, approx 30-45min.

Black Beans:
Soak Black Beans overnight, drain. Return to pot, add enough water to cover and cook for at least 1.5hrs.

You can either use a burrito shell or do more of a burrito bowl. Beans, sweet potatoes, shredded lettuce, shredded cheese, sour cream, chicken, salsa…whatever you would like!

The Sweet Potatoes are a delicious addition to any burrito-style meal! My boss made this dinner a while back. It was delicious!
